Cucumber Avocado Salad

Background: My husband, Tim, loves this cucumber avocado salad and can eat it year-round. It’s light, refreshing and compliments any meal.

  • 1 large English cucumber, cut lengthwise then cut into 1/2 coins
  • 3 scallions, white and green thinly sliced
  • 1 ripe avocado, cubed
  • Red pepper flakes, salt, and pepper to taste
  1. Combine everything in a bowl and dress with your favorite herbed, oil, and vinegar dressing.
  2. Toss and serve.
