Leftovers Lorie's Twist on Hash with Leftovers

Background: Great meal on a busy weeknight when you are faced with leftovers in the fridge. Add a salad and you have a wonderful meal to enjoy with your family. Or make the Drizzle Cake for a sweet ending.

  • Leftover cooked pieces of steak, roast, even prime rib
  • Leftover cooked potatoes and/or peel and cook 3 potatoes
  • 1 medium onion, finely diced
  • Butter, enough for sauteing
  • 1-2 eggs
  • 2-3 tablespoons half & half cream or heavy whipping cream
  • 2-3 tablespoons Lucini Italia EVOO
  • Green onions, optional for garnish
  1. Trim meat of most of the fat and / or gristle off the leftovers.
  2. Put all meats and cooked potato through a course meat grinder.
  3. In a large skillet saute an onion in butter until just beginning to brown.
  4. In a large bowl combine the ground meat/potato mixture and sauteed onion. Make sure it is well mixed together.
  5. Taste mixture to adjust favorite seasonings.
  6. Add 1 or 2 eggs depending on the hash mixture amount and several tablespoons of cream and mix well.
  7. Over medium high heat, in the same large skillet put several tablespoons of EVOO.
  8. While the skillet is coming up to temperate, take a handful of the hash mixture and form into a flattened patty. When skillet is hot enough, place patty in skillet, doing the same with the rest of the hash mixture.
  9. Cook several minutes until there is a nice golden crust before turning patties and doing the same on the other side.
