
Background: If you have never tried one of Suzanne Ryan’s Keto Karma recipes, you are in for a treat. Her Chicken with Creamy Mushroom Sauce is amazing and you can easily satisfy everyone in the family by adding rice if they are not following a keto lifestyle. Pair it with Keto Coleslaw. Yummy!
- 2 tablespoons butter salted
- 1 1/4 pounds chicken breasts (2 boneless, skinless breasts), cut in half lengthwise into 4 pieces
- 1/2 medium onion, chopped
- 3 garlic cloves, minced
- 12 ounces slided white mushrooms
- 1/3 cup FitVine Wine Pinot Grigio Wine or your favorite Chardonnay or dry white wine
- 1 cup heavy cream
- 1/3 cup grated parmesan cheese
- salt and pepper to taste
- parsley or basil chopped (optional for garnish)
- Add butter to a large, preheated skillet on medium-high heat.
- Season chicken breasts on both sides with salt and pepper. Place chicken breasts in skillet and cook on both sides, about 3 to 5 min per side, then transfer the chicken to a plate.
- Next, add the onion, garlic, mushroom, andwine to the skillet. Let them cook for about 5 minutes, stirring occasionally.
- Add heavy cream and parmesan cheese, stir, and cook for 5-7 minutes, stirring occasionally or until sauce reduces and thickens. Add the chicken back to the skillet and spoon the sauce over the chicken. Season with salt and pepper to taste and garnish with basil or parsley.
