
Red Velvet Cake in a Cup is a perfect dessert for entertaining!
Background: Red Velvet Cake in a Cup layers delicious cake with a perfect cream cheese frosting. This simple recipe is excellent for entertaining. I love that you can put a lid on them and pack them in a cooler. They also keep the bugs out which is great for outdoor BBQs and parties. The possibilities for Cake in a Cup are endless by changing up the cake and frosting. Using seasonal sprinkles and toppers is an easy way to make them festive for your occasion.
- 1 box of red velvet cake mix or your favorite homemade cake recipe
- plastic cups with lids
- 2 cup unsalted butter, room temperature
- 8 ounces cream cheese, softened
- 6 cups powdered sugar
- 2 tablespoons pure vanilla extract
- 1 teaspoon salt
- 1/4 or more heavy cream or milk to thin out icing
- Follow instructions on cake mix and bake accordingly. I used the two round pan instructions. Once the cakes are done, set them aside and let them cool completely.
- To make buttercream icing, use a hand mixer or stand mixer to beat the butter and cream cheese until smooth and creamy. Add in the powdered sugar, vanilla extract and salt. Beat until smooth and creamy. Use your heavy cream or milk to thin out your icing until desired consistency.
- To make your cake cups, you can use two methods. You can either use a biscuit cutter or cookie cutter to cut out round shapes from your cake or you can crumble all your cake in a large bowl and scoop it into the cups. I’ve tried both methods and prefer the crumble method.
- Either way, you will layer cake, then icing, then sprinkles, then repeat the process again.
- Refrigerate until ready to serve.
