Brussel Sprouts Nutty Brussel Sprouts

Background: Honey and Dijon mustard brussel sprouts perfectly topped off with walnuts makes Nutty Brussel Sprouts a family favorite.

  • 3 cups Brussel Sprouts
  • 3 tablespoons sherry vinegar
  • 3 tablespoons maple syrup or honey
  • 2 tablespoons minced shallots
  • 1 tablespoon Dijon mustard
  • 1/3 cup walnut oil
  • Salt and coarse ground pepper, to taste
  • 3/4 cup walnuts, chopped
  1. Cut “root” ends off sprouts, remove any damaged leaves and cut each one in half.
  2. Steam sprouts until fork tender.
  3. In the meantime, whisk together vinegar, maple syrup, shallots, mustard, salt, and pepper.
  4. Drizzle in walnut oil mixing vigorously with the whisk.
  5. Pour dressing over warm sprouts, add walnuts, and mix to combine.
