Chimichurri

This Chimichurri Sauce will take your meals to another level!

Background: This Chimichurri recipe is packed with flavor! It’s an excellent sauce served with steak and can be used as a marinade as well. Fresh cilantro, parsley, oregano, and garlic team up with red wine vinegar for a combination that is out of this world. You can put this Chimichurri Sauce on anything including chicken, fish, potatoes, sandwiches, or even your eggs!

  • 1 cup fresh cilantro
  • 1 cup fresh flat-leaf parsley
  • 1 shallot, finely chopped
  • 1/4-1/3 cup olive oil
  • 3-4 garlic cloves, finely chopped
  • 1/4 cup fresh oregano
  • 3 tablespoons fresh lime juice
  • 2 tablespoons red wine vinegar
  • 1 teaspoon or more kosher salt, to taste
  • 1/2 teaspoon pepper
  • optional: 1 Fresno chile or 1/2 teaspoon red pepper flakes
  1. Combine shallot, chile, garlic, vinegar, lime juice, and 1 teaspoon salt in a small bowl. Let sit for 10 minutes.
  2. Add shallot mixture and all other ingredients into food processor and blend, just until everything is chopped and smooth.
  3. Add additional salt if needed.
  4. Serve fresh and store any leftovers in the refrigerator for a few days.
