
Cheesecake Fruit Salad is the perfect dish for your 4th of July party!
Background: This Cheesecake Fruit Salad is festive and yummy. It’s a great dish for your 4th of July party or patriotic get-togethers! We used strawberries, bananas, and blueberries to represent the red, white, and blue, but you can use any fruit that you prefer. The possibilities are endless for this sweet recipe. Cheesecake Fruit Salad can be served as a dessert, side dish, or even star in your brunch line-up. If you don’t plan on serving it right away, don’t mix your cheesecake filling in with fruit until you are ready to serve.
- 1 pound fresh strawberries
- 2 cups fresh blueberries
- 4 bananas, sliced
- juice of 1 lemon
- 8 ounces cream cheese, room temperature
- 1/2 cup sour cream – Daisy Brand
- 1 tablespoon pure vanilla extract
- 1 cup powdered sugar
- 3.4 ounce Jell-O Cheesecake instant pudding mix
- In a medium bowl, use an electric mixer to beat cream cheese until it is smooth. Next, add the sour cream, vanilla extract, powdered sugar and beat until combined and smooth. Add the cheesecake pudding mix and beat until smooth. It may bind up, but keep beating until you get a nice, smooth mixture. Refrigerate until ready to mix with fruit.
- In a large bowl, combine the lemon juice and bananas. Stir to make sure all the bananas are coated well. Drain any excess lemon juice.
- Add strawberries and blueberries to the bananas, stirring gently to combine.
- When ready to serve, gently fold in the cheesecake mixture.
- Chill until ready to serve, or serve immediately.
