Perfect Peanut Butter Cookies under Glass

Background: Like many of my cookie recipes, I believe using the 1.5” cookie scoop to create these drop cookies is the secret to success!  These peanut butter cookies are soft and chewy.  The chocolate chips and peanut butter chips put them over the edge and make them difficult to put down.  For this recipe I do not smash them down or use a fork to put the crisscross design on them.  Keeping them as a true drop cookie yields the best results.   I hope you enjoy them as much as our family and friends do!  

  • 1 ¼ cups all-purpose flour
  • ¾ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup (one stick) butter, softened
  • 1 cup peanut butter
  • ½ cup sugar
  • ¾ cup firmly packed brown sugar
  • 1 large egg, at room temperature
  • 1 tablespoon milk
  • ½ tablespoon vanilla extract
  • ½ cup semi-sweet chocolate chips
  • ½ cup Hershey’s Peanut Butter Baking Chips
  • Additional sugar for sprinkling/rolling cookies in before baking
  1. Preheat oven to 350 degrees.
  2. In a large bowl, combine the flour, baking soda, baking powder and salt. Set aside.
  3. In another large bowl, beat the butter and peanut butter together until fluffy. Add the sugars and beat until smooth. Add the egg, vanilla extract and milk and mix well.
  4. Add the flour mixture and beat thoroughly.
  5. Stir in the peanut butter chips and the chocolate chips with a large spoon.
  6. Use a 1.5” cookie scoop to scoop dough.  Roll the top of the cookie in the sugar before placing on cookie sheet lined with parchment paper.  Cookies should be a couple inches apart.
  7. Bake for 10-12 minutes.  You do not want to overbake.  They make appear to be undercooked, but they are not.  You want them soft and chewy.
  8. Let the cookies cool for a few minutes before transferring to a cooling rack.
