
Background: The Calico Beans recipe is hearty enough to serve as a main dish but still perfect as a side to take to your neighborhood potluck or backyard BBQ. Our kids and their friends will continually ask me to make this yummy recipe. You can easily substitute ground chicken, pork, or turkey for a little “healthier” version.
- 1 pound ground beef, 90% lean
- 1/2 small onion, chopped
- 1 – 16 ounce can Bush Beans Pork and Beans with bacon or pork, undrained
- 1 – 15 ounce can Bush Beans Kidney Beans, undrained
- 1 – 15 ounce can Kuner’s Foods Butter Beans, undrained
- ½ cup packed brown sugar
- ½ cup ketchup
- ½ pound bacon, cooked and crumbled
- 3 tablespoons cider vinegar
- 2 teaspoons dried mustard
- 1 teaspoon salt
- Preheat oven to 350o.
- In a large skillet, cook beef and onion over medium heat until beef is no longer pink, 5-7 minutes, breaking up beef into crumbles; drain.
- Stir in remaining ingredients.
- Transfer to a greased 2 quart cast iron pan or baking dish.
- Bake, covered, 45minutes. Uncover and bake an additional 5-10 minutes or until top is caramelized.
Serve with Ashlee’s Skillet Jalapeno Cornbread and you will surely knock it out of the park!
