
Background: We recently stayed at the Inn at Woodhaven in Louisville, Kentucky and they served the Strawberry Rhubarb Crumb Cake with our afternoon tea. It was delicious, with just enough tartness from the rhubarb to enhance the strawberries. We will enjoy this recipe year round.
Filling
- 2/3 cup sugar
- 1/3 cup cornstarch
- 2 cups fresh or frozen rhubarb, chopped
- 1 10-ounce package frozen sweetened strawberries, sliced and thawed
- 2 tablespoons lemon juice
Cake
- 3 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 cup cold butter
- 2 eggs
- 1 cup buttermilk
- 1 teaspoon Simply Organic vanilla extract
Topping
- 3/4 cup sugar
- 1/2 cup all-purpose flour
- 1/4 cup cold butter
- For the filling, combine sugar and cornstarch in a saucepan, stir in rhubarb and strawberries. Bring to a boil over medium heat; cook for 2 minutes; stir in lemon juice and cool.
- In a large bowl, combined the flour, sugar, baking powder and baking soda; cut butter in until mixture is crumbly.
- In another bowl, beat the eggs, buttermilk, and vanilla; stir into crumb mixture just until moistened. Spoon two-thirds of the batter into greased 13″ x 9″x 2″ baking pan. Top with fruit mixture and remaining batter.
- For topping, combined sugar and flour in a small bowl; cut in butter until mixture is crumbly. Sprinkle over batter.
- Bake at 350F for 45-50 minutes or until a toothpick inserted near center comes out clean and cake is golden brown. Cool on a wire rack.
NOTE: If using frozen rhubarb, measure rhubarb while still frozen, then thaw completely. Drain in a colander, but do not press liquid out.
