Asian Cucumber Salad

This Asian Cucumber Salad is simple to make and has amazing flavors!

Background: Asian Cucumber Salad is easy and refreshing with the perfect amount of spice. It’s the ideal side dish to accompany any Asian entree. We love recipes that can be put together without spending a ton of time in the kitchen and this one checks the box. The dressing is sweet and spicy and pairs wonderfully with the crunch of the fresh cucumbers and peanuts. This salad is best when consumed the same day it is made.

Dressing:

  • 3 tablespoons soy sauce
  • 3 tablespoons rice wine vinegar
  • 1 teaspoon sugar
  • 1 teaspoon chile crunch oil
  • 1 teaspoon toasted sesame oil
  • 1 clove garlic, finely minced

Salad:

  • 12 ounces mini cucumbers (1 English cucumber) sliced
  • 1/3 cup peanuts, chopped
  • Fresh cilantro leaves
  • Red chile flakes, to taste
  1. Mix all dressing ingredients together in large bowl.
  2. Cut cucumber into slices, then half them.
  3. Add cucumbers to the dressing and stir until well combined.

We like to serve this salad with Pork Egg Rolls and Ube Cheesecake Bars.
