Pork Egg Rolls (Kab Yaub)

These Pork Egg Rolls (Kab Yaub) are the best we’ve ever had!

Background: Pork Egg Rolls (Kab Yaub) are the ultimate appetizer recipe. They are packed with flavor and impossible to put down. We’ve tried many variations over the years, but this recipe by Cindy Her is the best! Although egg rolls are typically considered a side dish or appetizer, these Pork Egg Rolls could be the main dish. Don’t forget the sweet chili dipping sauce!

  • 2.5 pounds ground pork
  • 5 ounces dried bean thread noodles (4 bundles)
  • ¼ cup minced garlic
  • 10 ounces shredded carrots (2.5-3 cups)
  • 10 ounces shredded cabbage (2.5-3 cups)
  • 1 tablespoon black pepper
  • 1 ½ teaspoon salt
  • 1 ½ teaspoon sugar
  • ¼ cup oyster sauce
  • ½ teaspoon chicken bouillon powder (add more if desired)
  • 2 cups chopped green onions (2 bundles)
  • 1 cup chopped wood-ear mushrooms
  • 3 eggs
  • Egg roll wrappers (50-60 sheets)
  • 1 more egg for egg wash
  • Oil to fry
  1. In a bowl, place bean thread noodles and submerge in warm water for about 30 minutes until it plumps up and is flexible to use. Drain, and then cut with scissors into smaller lengths so it’s easier to combine with pork mixture. While the noodles are soaking, cook ground pork, then set aside.
  2. In a large bowl, add the ground pork and seasonings. Mix well. Then add in all the vegetables, eggs, and cut up noodles. Mix until everything is well combined.
  3. Make your egg wash by beating one egg in a small bowl.
  4. Spoon the pork mixture into the center of the egg roll wrapper. Using this technique, roll it up and set aside. Repeat this step until you have used all your pork filling. The egg wash will be used to seal the egg roll up.
  5. Heat oil to about 350 degrees. Fry egg rolls in batches for about 5-8 minutes. Do not submerge the frying oil with too many egg rolls or you’ll get soggy egg rolls. Allow enough space for the egg rolls to fry up nicely, or until golden crispy. Remove egg rolls and set on a cooling rack.
  6. Serve with Sweet Chili Sauce for dipping.
