Easy Pickled Onions

These Easy Pickled Onions are the perfect complement to your BBQ spread.

Background: Nothing goes better with BBQ pulled pork than these Easy Pickled Onions. This is a simple recipe that is best when it sits overnight. We love to serve them with BBQ pulled pork sliders, but they are excellent with brisket, chicken, or on a burger or sandwich. The acidity provides just the right amount of tartness alongside sweeter sauces and marinades. These Easy Pickled Onions are excellent for gifting or taking to BBQs for the host. They will keep in the refrigerator for up to two weeks.

  • 2 red onions
  • 2 cups white vinegar
  • 2 cups water
  • ½ cup sugar
  • 2 tablespoons sea salt
  • 6-8 garlic cloves
  • 2 tablespoons whole peppercorns
  • 1-2 jalapenos (optional)

  1. Thinly slice onions. A mandolin helps but is not necessary.
  2. Heat vinegar, water, sugar, and sea salt in a saucepan on low until completely dissolved, stirring occasionally.
  3. Once completely dissolved, remove from heat and allow to cool to room temperature.
  4. Put sliced onions in jars with garlic cloves, peppercorns, and jalapenos (optional).
  5. Add liquid to jars, seal, and refrigerate overnight.
