
Background: Penicillin is an IBA official cocktail that combines honey, lemon, ginger and whisky. Two different scotches come together to create this tasty summer drink. The honey syrup is simple to make and is key to the amazing flavor of this cocktail. It’s the perfect drink to sip on while you enjoy the warmth of summer.
- 2 ounces Johnnie Walker Green Label Scotch Blend
- 1 ounce fresh lemon juice
- 3/4 ounce honey syrup
- 1/2 ounce single malt scotch
- 1″ piece of fresh ginger
Honey Syrup:
- 1 1/2 cup honey
- 1/2 cup water
- 1/4 cup fresh lemon juice
- 1/2 teaspoon grated lemon zest
- Combined all ingredients in a small saucepan.
- Cook over medium heat stirring occasionally until boiling.
- Continue to boil until the mixture is reduced to 1/3.
- Store in a glass jar, in the fridge.
Assembling the Cocktail
- Mix the first 3 ingredients together well, pour into an On-the-Rocks glass over a large ice cube or ice sphere.
- Float the single malt on top.
- Garnish with several thin slices of fresh ginger and lemon curl on a toothpick.
