Macaroni & Cheese Casserole

This Macaroni & Cheese Casserole is a fun twist on a classic recipe.

Background: A friend made this Macaroni & Cheese Casserole as a side on Thanksgiving. It was so yummy and went fast! It’s a fun twist on a classic recipe. I altered it slightly when I made it and was pleased with how it turned out. This recipe is so easy and would be an excellent choice for family dinners, BBQs, or when you have to feed the masses. I doubled this recipe to use a 9×13 casserole dish. Otherwise, use a small casserole dish.

  • 1 can creamed corn
  • 1 can sweet corn
  • 1/2 cup butter
  • 1 cup elbow pasta
  • 1 cup shredded cheddar cheese
  • 8 ounces cubed Velveeta cheese
  • salt & pepper to taste
  1. Preheat oven to 350 degrees.
  2. Mix creamed corn, corn, macaroni, and both cheeses in a large mixing bowl.
  3. Cut butter into the corn and pasta mixture and mix well. Season with salt & pepper to taste.
  4. Pour mixture into a buttered casserole dish. Cover with foil and bake 30 minutes.
  5. Uncover, stir, and bake for an additional 30 minutes, uncovered.
  6. Serve immediately and enjoy!
