Cauliflower Casserole

Background: This Cauliflower Casserole is cheesy, flavorful, and a healthier alternative to most side dishes. The fresh garlic, parmesan cheese, and everything bagel seasoning make for a killer combination. We love to make this for holidays, BBQs, or weekday dinners.

  • 2 heads of cauliflower, cut into florets
  • 5 cloves of garlic
  • 3 tablespoons butter
  • 1/2 cup flour
  • 1-2 cups low-fat milk
  • 1 ½ cups fresh parmesan cheese
  • 2 tablespoons everything bagel seasoning
  • 1 teaspoon black pepper
  1. Prepare a casserole dish by using butter or non-stick spray. Preheat oven to 425 degrees.
  2. Melt butter in a large stock pot over medium high heat on the stove. As butter melts, add in garlic. I use a hand grater to grate it in, or you can slice your garlic. Mix your garlic in and be careful to not let it burn.
  3. Once your garlic is fragrant, begin your roux by adding in 1-2 tablespoons of flour, whisking to combine with the garlic and butter.
  4. Slowly add half of your milk to the mixture, while constantly whisking. Continue to add remaining flour and milk until your roux thickens up and you’ve gotten rid of clumps.
  5. Turn your heat down to medium and stir in your pepper.
  6. Add your cauliflower to the pot and stir until well coated with the roux.
  7. Next, pour mixture into casserole dish and bake for 35 minutes or until cauliflower is tender.
  8. While cauliflower is baking, combine your parmesan cheese and everything bagel seasoning in a small bowl.
  9. After the cauliflower is tender, remove from the oven and top with cheese mixture.
  10. Turn your oven to broil and watch carefully as the cheese melts and turns golden brown, usually 2-3 minutes.
  11. Remove from oven and serve.
