Background: We made Momma Jean’s Granola Pie with some slight adjustments and we are sold! It’s the perfect dessert for Thanksgiving. It is a fun twist on the classic pecan pie and just as good. The added chocolate chips and granola take the flavor to a whole new level. Often times people are intimidated to make their own pie, but this recipe was surprisingly easy. Momma Jean’s Granola Pie is going on our menu for Thanksgiving this year and we can’t wait!
- 1 pre-made frozen deep dish pie crust
- 1/2 cup salted butter
- 1/2 cup packed brown sugar
- 3/4 cup Karo corn syrup
- 1 teaspoon sea salt
- 2 teaspoons pure vanilla extract
- 3 eggs, slightly beaten
- 4 crushed up Nature Valley Oats ‘N Honey granola bars (2 pouches)
- 1/2 cup chopped pecans
- 1/4 cup old fashioned oats
- 1/4 cup semi-sweet chocolate chips
- Heat oven to 350 degrees.
- In a large microwavable bowl, microwave butter until melted. Stir in brown sugar and corn syrup until blended. Beat in salt, vanilla and eggs. Stir crushed granola bars, pecans, oats and chocolate chips into the mixture. Pour into pre-made pie crust.
- Bake 55-60 minutes until center of pie no longer jiggles. During the last 15-20 minutes of baking, cover crust edge with strips of foil to prevent excessive browning.
- Cool at least 30 minutes prior to serving. Serve warm, room temperature, or chilled with whipped cream or ice cream. Cover and refrigerate any remaining pie.
