
Raspberry Lemonade Punch is a refreshing, delicious drink with just the right amount of sweet!
Background: This Raspberry Lemonade Punch is simple and delicious! It’s a perfect drink for spring and summer. The homemade raspberry simple syrup is easy to make, but plays a key role in this fresh tasting mocktail. You can easily transform this drink into a cocktail by swapping the club soda for Prosecco. I love ingredients that can make both alcoholic and non-alcoholic versions of your drinks.
- Simply Lemonade
- raspberry simple syrup (see instructions)
- club soda
- lemon slice or wedge for garnish
- For raspberry simple syrup: combine 2 cups raspberries (fresh or frozen), 1 cup sugar and 1 tablespoon fresh lemon juice in a medium saucepan. Stir and bring to boil over medium heat. Cook on low heat for an additional 10-15 minutes. Turn off the heat and allow syrup to cool. Pour syrup through a fine mesh strainer (or clean muslin cloth lined strainer) into a bowl. Pour into a plastic bottle or jar and refrigerate.
- Fill glass with ice and add 1 ounce of raspberry syrup.
- Add lemonade until glass is about 3/4 full. Top with club soda and gently stir.
- Garnish with lemon slice or lemon wedge and serve.
