40 Cloves of Garlic Roast Pork with 40 Cloves of Garlic

Background: Inspired by James Beard’s Roast Chicken recipe with 40 cloves of garlic, we substituted pork in our Roast Pork with 40 Cloves of Garlic recipe. A delicious weeknight dish for the whole family to enjoy with Crock Pot Mashed Potatoes. Savor an Ultimate Manhattan before dinner.

  • 3 tablespoons chopped fresh thyme divided in half
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon salt
  • 2 teaspoons ground fennel seed
  • 1 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 3-pound boneless pork loin roast trimmed and tied if necessary
  • EVOO
  • 40 Cloves of garlic, peeled and whole   About 4 heads
  • 1 cup chicken broth
  • 2/3 cup dry white wine
  • 2/3 cup heavy cream
  1. Combine the thyme (half only), rosemary, salt, fennel seed, black pepper, and red pepper flakes in a bowl and mix well.
  2. Rub seasoning completely over the roast, wrap it in plastic wrap, and refrigerate for 1 – 24 hours in advance.
  3. Remove roast from refrigerator and bring to room temperature.
  4. Preheat oven to 300F.
  5. Heat 2 – 3 tablespoons of oil in an oven-proof skillet or saucier pan on high heat.
  6. Sear roast on all sides, for about 7 minutes.
  7. If you have a meat thermometer place probe with the tip at the center of the roast.
  8. Add all the garlic cloves to the pan and place in the oven.
  9. The internal temp of the meat should be 130F for approximately 40 – 50 minutes.
  10. Remove the roast to a carving board and cover it with foil.  Let rest for 20 minutes; internal temp will rise to 145F – 150F.
  11. While the meat is resting place a skillet with garlic on the stovetop at medium-high heat.  The garlic clove should be mostly browned but turn each to ensure no further browning is needed.
  12. Add broth, wine, reserved thyme, and heavy cream – bring to a boil then reduce to medium-low heat.
  13. Reduce sauce by 1/2 or until it coats the back of a spoon.
  14. Check and adjust salt and pepper as needed.
  15. Slice roast thinly and spoon garlic cloves and sauce over.
