
These Greek Chicken Kabobs are juicy and packed with yummy flavor!
Background: The key to these Greek Chicken Kabobs is the marinade. Ideally, you’d like for your chicken to marinate overnight, which will ensure that you get the best flavors. We use this recipe for our Greek Chicken Pitas, and the flavor is so incredible that you don’t even need a sauce. However, if you do add a sauce, we recommend our Zesty Tzatziki Sauce. Once you try these chicken kabobs, you’ll be hooked!
- 2 pounds boneless, skinless chicken breast, cut into 1-inch chunks
- 2-3 tablespoons olive oil
- 2 tablespoons fresh squeezed lemon juice
- 1 tablespoon lemon zest
- 1 shallot, very finely chopped
- 2-3 garlic cloves, grated or minced
- 1 tablespoon dried oregano
- 1 tablespoon dried basil
- 1/2 tablespoon dried thyme
- salt and pepper to taste
- In a medium bowl, combine olive oil, lemon juice, zest, and all seasonings together. If the marinade is too thick, you can add a little olive oil to thin it out, but this marinade is intended to be more thick vs. runny so don’t add too much.
- Stir in the chicken until well combined and marinate overnight, or a minimum of 2-3 hours.
- Thread chicken onto skewers and preheat grill to medium heat.
- Cook skewers on grill, turning/rotating occasionally until the chicken is cooked through, about 10 minutes.
