Frozen S'mores

Frozen S’mores are a fun, cool twist on a classic dessert!

Background: These Frozen S’mores have all the things you love about the classic dessert all rolled up into a delicious and refreshing ice cream sandwich! Toasted marshmallows, graham crackers, and mini chocolate chips give the vanilla ice cream an amazing flavor. Everyone loves ice cream during the summer to beat the heat and these Frozen S’mores will put smiles on everyone’s face. The hardest part of this recipe is getting the ice cream at just the right consistency to build your sandwiches. Other than that, it’s a simple recipe!

  1. Preheat your broiler to high.
  2. Spray a rimmed baking sheet with nonstick cooking spray. Spread the marshmallows on the baking sheet and broil until deep brown, about 30 seconds. Remove from the oven and set aside for 10 minutes to cool.
  3. Using a stand mixer or hand mixer, beat ice cream on medium-low speed, just until soft. Add the toasted marshmallows, mini chocolate chips, and 3 of the graham crackers (broken up into small pieces) and mix on low, until just combined.
  4. If your ice cream mixture has softened up too much, place it in the freezer until it is no longer soupy. Otherwise, work quickly and start composing your ice cream sandwiches.
  5. Freeze until firm, at least two hours. Enjoy!
