Thin Mint Dirt Cups

Thin Mint Girl Scout Cookies put a fun spin on the classic Dirt Cup dessert recipe!

Background: Thin Mint Dirt Cups are delicious, easy, and family friendly! We swapped out Oreos for Girl Scout cookies in this dessert recipe. These are great for entertaining and a fun way to incorporate everyone’s favorite mint cookie. We love recipes that get the kids involved and this one does just that. From whipping up the pudding, smashing the cookies, and assembling the cups, all the steps are simple enough to let the little ones help out. When Girl Scout cookie season is over with, you could make this recipe with Mint Oreos instead.

  1. Take half the box of Thin Mints and crush them into a “gravel” consistency.
  2. Next, take the remaining intact cookies and coarsely chop them or break them up by hand.
  3. Prepare chocolate pudding per instructions on the box. Typically, you’ll whisk milk and pudding mix together for 2 minutes. Let stand for 5 minutes.
  4. Mix coarsely chopped whole Thin Mints into the pudding mixture. Then, fold in cool whip.
  5. To construct dirt cups, sprinkle some of the Thin Mints “gravel” mix into bottom of the dish. Add pudding mixture, then top with more Thin Mints “gravel”.
  6. Refrigerate for a few hours before serving.
