Banana Bread

We have tested out many recipes, but this Banana Bread is the best one yet!

Background: This Banana Bread recipe is a simple recipe that everyone will love! It’s moist, flavorful and requires minimal ingredients. Based on your preference, you can add your favorite nut or leave them out. We love banana bread and have tried many recipes over the years, but we always go back to this one. It’s great for breakfast, brunch, or as a yummy snack. The key to this recipe is perfectly ripe bananas and the secret ingredient, mayonnaise. Sounds weird right? We turned our nose up at it, but were shocked on the difference it makes! Try it out and let us know what you think.

  • 3 medium ripe bananas
  • 1/2 cup mayonnaise
  • 1 tablespoon pure vanilla extract
  • 1 egg
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 3/4 cup sugar
  • 1/2 cup chopped pecans or walnuts (optional)
  1. Preheat oven to 350 degrees. Grease a loaf pan and set aside – I use Pam Baking Spray.
  2. In a medium to large bowl, mash bananas with a fork. Once they are mashed well, mix in mayonnaise, egg, and vanilla extract until well combined.
  3. In a separate bowl, whisk flour, sugar, baking soda, salt, cinnamon, and nuts (optional) together.
  4. Add flour mixture to wet mixture and stir, just until combined. Do not over mix.
  5. Pour into prepared, greased loaf pan. Bake for 50-60 minutes or until toothpick comes out clean.
  6. Allow bread to cool in pan for about an hour before removing. Allow to completely cool before slicing and store in air tight container.
