- 3 large red, yellow, or orange bell peppers, washed and halved
- 1 large onion, chopped
- 5 cloves of garlic, minced
- extra virgin olive oil
- 1 pound sausage (can be hot, mild, pork or turkey)
- 1 jar “good” store bought Marinara sauce
- ¾ cup Mozzarella cheese, shredded
- 1/3 cup Parmigiano cheese, grated
- Wash, half and seed 3 large bell peppers.
- Cover a cookie sheet with foil and then a sheet of parchment paper.
- Place prepared pepper halves open side up and par-cook in 350 F oven for 10 minutes.
- In a large skillet, saute onions and garlic in olive oil until tender and just starting to brown, add in sausage; cook thoroughly and break into small pieces as it cooks.
- Fill pepper halves ¾ full of meat mixture, and place several tablespoons of marinara on top.
- Bake, covered with another sheet of parchment paper for 20 minutes.
- Generously sprinkle mozzarella on top. Bake for 7-10 minutes more. Watch to make sure the cheese does not burn.
- Sprinkle the top of each pepper with Parmigiano and bake for 5 more minutes.
