  • 3 large red, yellow, or orange bell peppers, washed and halved
  • 1 large onion, chopped
  • 5 cloves of garlic, minced
  • extra virgin olive oil
  • 1 pound sausage (can be hot, mild, pork or turkey)
  • 1 jar “good” store bought Marinara sauce
  • ¾ cup Mozzarella cheese, shredded
  • 1/3 cup Parmigiano cheese, grated
  1. Wash, half and seed 3 large bell peppers.
  2. Cover a cookie sheet with foil and then a sheet of parchment paper.
  3. Place prepared pepper halves open side up and par-cook in 350 F oven for 10 minutes.
  4. In a large skillet, saute onions and garlic in olive oil until tender and just starting to brown, add in sausage; cook thoroughly and break into small pieces as it cooks.
  5. Fill pepper halves ¾ full of meat mixture, and place several tablespoons of marinara on top.
  6. Bake, covered with another sheet of parchment paper for 20 minutes.
  7. Generously sprinkle mozzarella on top. Bake for 7-10 minutes more.  Watch to make sure the cheese does not burn.
  8. Sprinkle the top of each pepper with Parmigiano and bake for 5 more minutes.
