Buffalo Chicken Pasta is a hearty, cheesy, and flavor packed dinner recipe that you must try!
Background: This Buffalo Chicken Pasta recipe is like healthy, comfort food if that’s a thing. It’s a dinner recipe that everyone should try! Chicken, cheddar, and buffalo sauce team up to create this addicting, pasta dish. A dear friend made this recipe for us last month and we have made it multiple times since then. It’s pretty simple to make and can be refrigerated before baking, making it a perfect, weekday dinner dish when meal prepping and planning. You can cater the amount of buffalo sauce and ranch seasoning you use to your preferred taste or heat level.
- 1-2 pounds chicken breasts, shredded
- 1 box dried pasta of your choice, we used Barilla Farfalle Pasta
- 8 ounces cream cheese, softened
- 16 ounces nonfat Greek yogurt
- 1 Hidden Valley Ranch Seasoning Mix packet
- Frank’s Red Hot Buffalo Sauce, as much as your heart desires (approx. 1/3 cup to 1/2 cup or more)
- 8 ounces shredded cheddar cheese + more for topping or set some aside for topping
- Preheat oven to 350 degrees. Lightly grease any casserole pan and set aside.
- While the pasta boils, combine all other ingredients in a large bowl.
- Cook pasta to just before el dente. Drain and add to the mixture. If you want it creamier, you can add more yogurt. If you want it spicier, add more buffalo sauce.
- Pour the mixture into the prepared pan. Top with shredded cheese. Bake covered in foil for 30 minutes. Remove foil and cook for an additional 5-10 minutes.
