
Easy Egg Bites are a healthy, simple recipe for breakfast or snacking.
Background: These Easy Egg Bites are an excellent source of protein during the busy week. They’re a great, healthy snack or breakfast option. Because you can choose any ingredients that you like, the possibilities are endless! We love to mix in bacon, sausage, bell pepper, green chili, cheese, or onion, but you can cater them to your personal taste. Subbing whole wheat tortillas is another great option to make these an even healthier choice. These Easy Egg Bites can be made day of or reheated throughout the week.
- large tortillas, regular or whole wheat
- circle cookie cutter, biscuit cutter or jar lid to cut out circles from tortillas
- 8-12 eggs, depending on how many egg bites you’d like to make
- salt and pepper to taste
Other ingredients you can mix in with your egg bites, but aren’t limited to:
- bacon
- sausage
- bell pepper
- onion
- cheese
- 505 roasted green chile or salsa
- spinach
- diced vegetables
- hash browns
- Preheat oven to 350 degrees. Prepare a muffin pan with non-stick spray.
- Using the cookie/biscuit cutter, jar lid, or even a cup or glass, cut out circles from your tortillas. Press the tortilla rounds into the muffin pan, creating a bowl.
- In a medium bowl, beat your eggs and salt and pepper.
- Add your preferred mix-ins to each tortilla bowl, then top with egg mixture.
- Bake for 20-30 minutes, or until egg is cooked through.
- Serve immediately or allow them to cool before freezing or refrigerating.
