Sausages and Apples

Background: There is nothing better then the smell of sausages, apples and onions roasting in the oven on a cold winter night. Pair it with Keto Coleslaw for a delicious weekday dinner.

  • 3 apples, peeled and sliced
  • 1 medium onion, sliced very thin
  • 2-5 sprigs of thyme or rosemary
  • 2 tablespoons olive oil
  • 2 teaspoons fennel seeds
  • 1/2 teaspoon salt
  • 1/4 teaspoon coarse ground pepper
  • 4 large uncooked sausages (I use 2 sweet Italian and 2 hot Italian)
  • 1-3 tablespoons quality balsamic vinegar
  1. Preheat oven to 350F.
  2. In a large bowl place sliced apple, onions, herbs, fennel seeds, salt and pepper; toss all with the olive oil until well coated.
  3. Pour into a medium-large skillet or low-sided saucepan.
  4. Spread evenly on the bottom; nestle the sausages into the apple/onion mixture, cover skillet and roast in the oven for 1 hour. 
  5. Remove lid and drizzle balsamic vinegar over everything and continue roasting another 10 minutes.
