- 1 large cauliflower head, chopped into bite sized florets
- 2 red, yellow, or orange bell peppers
- 1 green bell pepper
- 1 medium onion, halved and cut into slices
- 2-3 tablespoons olive oil
- juice of 1/2 lime
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 2 teaspoons paprika
- 1-2 teaspoons salt, to taste
- Preheat oven to 425 degrees. Cover a large sheet pan with non-stick foil, parchment paper or spray with oil or nonstick spray.
- Add all spices to a small bowl and mix well. Set aside.
- Place cauliflower, peppers, onions, spice mixture, olive oil, and lime juice in a large bowl. Mix well.
- Pour mixture onto prepared pan. Roast for 20-25 minutes.
- Serve with tortillas and all your favorite toppings.
