This Shrimp Louie Salad is the best of both worlds – healthy and delicious!

Background: Shrimp Louie Salad is fresh and delicious dish from San Francisco. It’s a beautiful summer salad packed with fresh vegetables. Made with shrimp and hard-boiled eggs, this salad is packed with protein. We highly recommend making your own dressing because the flavors will be phenomenal. This healthy recipe is great for lunch or dinner and is sure to please the whole family.

Dressing for Shrimp Louie Salad:

  • 1 cup mayo
  • 3 tablespoons ketchup
  • 2 tablespoons chopped chives
  • 1 tablespoon flat-leaf parsley
  • 1 tablespoon lemon juice
  • 1 clove minced garlic
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon caper
  • 1 teaspoon prepared horseradish
  • 2 – 3 Tablespoons sweet pickle relish without liquid
  • Salt and pepper to taste

Salad:

  • Butter lettuce, torn into bitesize pieces
  • English cucumber, sliced thin
  • Avocado, sliced
  • Cherry tomatoes, halved
  • Celery, chopped
  • Hard-boiled eggs, quartered
  • Shrimp, cooked, cleaned, and chilled
  1. Place all ingredients food processer EXCEPT pickle relish. Blend until smooth.
  2. Move to a glass storage jar; add pickle relish and adjust salt and pepper.
  3. Arrange salad item, top with shrimp and dressing.
