We made the Egg Roll in a Bowl from Peace, Love, and Low Carb and we are hooked on this recipe!

Background: This low carb Egg Roll in a Bowl recipe is quick and easy! We love a good one pan meal and this one has earned a spot in our regular rotation. Kyndra Holley from Peace, Love, and Low Carb has so many great recipes that are packed with flavor. For this Egg Roll in a Bowl, you can make substitutions to cater it to your taste or macros. It is traditionally made with ground pork, but we typically use ground chicken as a leaner, healthier option. You can also jazz it up with other stir fry veggies.

  • 2 tablespoons toasted sesame oil
  • 3-4 cloves garlic, minced
  • 1/2 cup onion, diced
  • 5 green onions, sliced on a bias (white and green parts)
  • 1 pound ground pork or ground chicken
  • 1/2 teaspoon ground ginger
  • sea salt and black pepper, to taste
  • 1 tablespoon Sriracha sauce
  • 14 ounce bag coleslaw mix
  • 3 tablespoons gluten free soy sauce or coconut aminos
  • 1 tablespoon unseasoned rice vinegar
  • 2 tablespoons toasted sesame seeds
  • Yum Yum Sauce for serving
  1. Heat the sesame oil in a large skillet over medium high heat.
  2. Add the garlic, onion, and white portion of the green onions. Sauté until the onions are translucent and the garlic is fragrant.
  3. Add the ground pork, ginger, salt, pepper and Sriracha. Sauté until the pork is cooked through.
  4. Add the coleslaw mix, soy sauce, and rice vinegar. Sauté until the coleslaw is tender.
  5. Top with green onions and sesame seeds before serving.
