
Background: Don’t let the simplicity of these Texas Sheet Cake Cookies fool you. They are soft, decadent and my favorite chocolate cookies! Texas Sheet Cake always reminds me of childhood summers spent with my Oklahoma family. These cookies are a quick and easy way to satisfy my craving for that yummy dessert but in cookie form! I hope you enjoy!
- 1 box of chocolate cake mix
- 2 eggs (whisked)
- 1/3 cup oil
- 1 stick butter
- 1 Tablespoon cocoa powder
- 3 Tablespoons milk
- 2 1/2 cups powdered sugar
- Preheat oven to 350 degrees.
- Combine the cake mix, eggs and oil in a large bowl and mix until completely incorporated. The dough will be very thick.
- Using a cookie scoop or small spoon, scoop cookies onto a parchment lined cookie sheet.
- Bake for 7-8 mintues, remove from oven and let cool on cookie sheet for 4-5 minutes before moving them to a cooling rack. Repeat until all of the dough is baked.
- For frosting, combine butter, cocoa powder and milk in a small saucepan over medium heat and whisk until the mixture has melted. Remove from heat, add powdered sugar and whisk until smooth.
- Pour frosting over cookies. Use a knife or spoon to to move excess frosting and be sure that each cookie is covered.
- Let frosting set and serve. Keep your Texas Sheet Cake Cookies in an air tight container at room temperature for up to 3 days.
This is the perfect dessert after a dinner of Santa Fe Chicken Chili.
