Santa Fe Chicken Chili

Background: I’ve tried a lot of chicken chili recipes but our family friend Deb’s is my favorite! Santa Fe Chicken Chili is a simple meal to make since everything cooks in one pot. We like to top our chili off with cheese, sour cream, tortilla strips, or even avocado. You’ll want to add Santa Fe Chicken Chili to your regular dinner line-up, especially when it’s cold outside.

  • 1/8 cup olive oil
  • 4 cloves minced garlic
  • 2 chopped medium red bell peppers
  • 1 chopped medium onion
  • 1 1/2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • 1 15 ounce can diced tomatoes (with juice)
  • 1 can chicken broth
  • 1 pound cubed chicken breast
  • 1 can of beans (kidney or great northern)
  • 1/2 jar of salsa
  • 1 cup of frozen corn
  1. Warm oil in pot, add peppers, onion and garlic. Saute for 5 minutes.
  2. Add chili powder, cumin and cayenne. Stir and cook for 1 minute.
  3. Add tomatoes with juice and chicken broth. Simmer for 15 minutes.
  4. Stir in remaining ingredients, bring to a boil and simmer for 5 minutes until chicken is just cooked.
  5. Serve with cheese, sour cream, tortilla strips, avocado, sliced red onion or even freshly sliced jalapenos. Enjoy!
