Potstickers

  • 1 pound pork
  • 1 pound hamburger
  • 2 garlic cloves, minced
  • 3 tablespoons soy sauce
  • ½ cup green onion
  • 1 package wonton wrappers
  • 3 tablespoons sherry
  • 1 bunch cilantro (to taste)
  • Canola oil for frying
  • Water
  • Sesame oil for serving
  • Soy sauce for serving
  1. Mix pork, hamburger, garlic, soy sauce, green onion, sherry and cilantro with hands.
  2. Place small ball on center of Wonton wrapper.
  3. “Paint” two edges of wrapper with water.
  4. Fold wonton wrapper diagonally.
  5. Pleat folded wonton wrapper three times across top and pinch top.

Two options at this point:

  • Freeze: place on waxed paper; freeze for 2 hours; place in freezer bag.
  • Cook: Fry in canola oil- ONE side only. Once browned, turn potsticker and add several tablespoons of water to pan. Cover and steam until water has dissipated.

Serve with sesame oil and soy sauce – I usually combine these for one dipping sauce.

Variations:

  • Cream Cheese, Green onion, shrimp or crab, garlic
  • Chicken breast sauteed in peanut or sesame oil (food process cooked chicken with 1 tablespoon sesame oil), 3 tablespoons soy sauce, 1/2 cup green onion. Add fresh cilantro to blended chicken mixture.

Background: My family loves to get together for a fun afternoon of laughter while we assemble masses of potstickers for our various homes. These can be frozen for a quick option during the busy weeks or impromptu get-togethers.
