
This Raspberry Lemonade Mimosa is a fun twist on a classic cocktail!
Background: We love a good mimosa and this Raspberry Lemonade Mimosa is a fun change up from the classic version. Try this cocktail at your next brunch! The raspberry simple syrup is key to the great flavor and is easy to make. Just like any mimosa, guests can add as much or as little of each of the ingredients to appease their taste. I usually set everything out and allow guests to make their own. You can garnish with lemon slices, whole raspberries, or even add edible cocktail glitter for a little sparkle! Don’t be afraid to experiment with your drink recipes, because it might yield something amazing! You can easily change up your simple syrup by swapping out different fruits to create other cocktails or mocktails.
- Simply Lemonade
- Prosecco
- raspberry simple syrup (see instructions)
- For raspberry simple syrup: combine 2 cups raspberries (fresh or frozen), 1 cup sugar and 1 tablespoon fresh lemon juice in a medium saucepan. Stir and bring to boil over medium heat. Cook on low heat for an additional 10-15 minutes. Turn off the heat and allow syrup to cool. Pour syrup through a fine mesh strainer (or clean muslin cloth lined strainer) into a bowl. Pour into a plastic bottle or jar and refrigerate.
- Add desired amount of raspberry simple syrup into bottom of champagne glass.
- Add desired amount of lemonade, then top with Prosecco.
- Garnish with lemon wheel or fresh raspberries and serve!
