S'mores Cookie Bars

S’mores Cookie Bars combine two classics, chocolate chip cookies and s’mores!

Background: These S’mores Cookie Bars are the perfect dessert for summer time! Chocolate chips cookies teamed up with s’mores is absolutely delicious! No need to wait for a campfire to get your s’mores fix with these chewy, gooey bars. These two classic dessert recipes combine forces for the ultimate oven-baked treat. They are very simple to make and will be the star of your summer BBQs and get togethers.

  1. Preheat oven to 350 degrees and line a 9×13 baking dish with parchment paper.
  2. Using a stand mixer or hand mixer with a large bowl, beat the butter and sugars together. Mix in the eggs and the vanilla extract until well combined.
  3. In a medium bowl, whisk the flour, baking soda, and salt. Gradually mix the dry mixture into the wet ingredients, just until combined.
  4. Fold in the chocolate chips, graham cracker pieces, and 2 cups of the mini marshmallows.
  5. Press the dough into the prepared baking dish. Top with the remaining mini marshmallows. Press down slightly to set them into the dough.
  6. Bake for 24-28 minutes or until the edges are golden brown. Scatter mini chocolate bars on top while still warm.
  7. Allow the bars to cool completely before cutting them into bars.
