Sheet Pan Cauliflower Fajitas

We recently made these Sheet Pan Cauliflower Fajitas as a vegetarian option for dinner.

Background: This Sheet Pan Cauliflower Fajitas recipe is an excellent vegetarian dinner option. They are delicious and flavorful! You can adjust your spice mix to cater to your individual taste, but the spice blend we have is fantastic. Baking them in the oven or in the smoker will yield a great result that everyone will love. Serve them with your favorite toppings like guacamole, salsa, cheese, jalapenos, cilantro, or sour cream. If you’re looking for a healthy dinner recipe or just something different, Sheet Pan Cauliflower Fajitas hit the spot.

  • 1 large cauliflower head, chopped into bite sized florets
  • 2 red, yellow, or orange bell peppers
  • 1 green bell pepper
  • 1 medium onion, halved and cut into slices
  • 2-3 tablespoons olive oil
  • juice of 1/2 lime
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons paprika
  • 1-2 teaspoons salt, to taste
  1. Preheat oven to 425 degrees. Cover a large sheet pan with non-stick foil, parchment paper or spray with oil or nonstick spray.
  2. Add all spices to a small bowl and mix well. Set aside.
  3. Place cauliflower, peppers, onions, spice mixture, olive oil, and lime juice in a large bowl. Mix well.
  4. Pour mixture onto prepared pan. Roast for 20-25 minutes.
  5. Serve with tortillas and all your favorite toppings.
