Pecan Pie Bars

These Pecan Pie Bars are everything you love about Pecan Pie, but in a bar!

Background: Pecan Pie Bars are a must make recipe for the holiday season. They are simple and delicious! With everything you love about classic Pecan Pie, but in a bar form, this recipe travels well to parties and gatherings. Forget the plates and forks because Pecan Pie Bars can be eaten out of the hand, which is excellent for entertaining. I’m not usually a huge pecan pie fan, but I love these little bars!

  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • ½ teaspoon salt
  • ¾ cup butter, cold
  • 1 cup packed brown sugar
  • ½ cup butter
  • 1 cup light-color corn syrup
  • 4 eggs
  • 2 ½ cups chopped pecans
  • 2 teaspoons pure vanilla extract
  • pinch of salt for pecan filling
  1. Preheat oven to 350 degrees. Line a 13×9 -inch baking pan with foil. Grease foil and set aside.
  2. In a large bowl mix first three ingredients. Then, using a pastry blender, cut in the ¾ cup cold butter until the mixture resembles fine crumbs. Press mixture into greased pan. Bake for 15-20 minutes, or until light brown.
  3. In a medium saucepan combine brown sugar, ½ cup butter, and corn syrup. Bring to boil over medium heat, stirring constantly. Remove from heat.
  4. In a medium bowl, lightly beat eggs. Gradually stir about ½ cup of the hot mixture into eggs. Return all the egg mixture to saucepan. Stir in pecans, vanilla, and pinch of salt. Pour over baked crust.
  5. Bake 30-32 minutes or until filling is set. Cool in pan on a wire rack. Cut into bars. Will keep in refrigerator for up to 3 days.
