
Background: We made Ree Drummond’s Buffalo Chicken Totchos with a few adjustments and they were a big hit! It’s a perfect recipe for game day! The buffalo wing sauce packs a punch along with the shredded pepper jack cheese. We are a house divided, so we drizzled homemade ranch dressing on half the totchos and homemade blue cheese dressing on the other half. The crispy tater tots hold up well with everything piled on top. We’ve tried a handful of the Pioneer Woman‘s recipes, but these Buffalo Chicken Totchos are our new favorite! Try them yourself and you will not be disappointed.
- 32 ounce bag frozen tater tots
- 3 boneless, skinless chicken breasts, cut into bite-size pieces
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 2 teaspoons garlic salt
- 3 tablespoons salted butter
- kosher salt
- fresh cracked pepper
- 3 cloves garlic, minced or grated in
- 3 green onions
- 1 1/2 cups buffalo wing sauce
- 2 cups shredded pepper jack cheese
- ranch dressing or blue cheese dressing – we made our own ranch dressing which can easily be adjusted to make blue cheese dressing
- Preheat the oven to 450 degrees.
- Toss the tots with the chili powder, cumin, and garlic salt in a large mixing bowl until evenly coated. Arrange the seasoned tots on a baking sheet and bake until golden and crisp, about 28-30 minutes. Note: the package may say to bake them for less time, but you’ll want extra crispy tots to hold up to all the toppings.
- Meanwhile, heat a large cast-iron skillet over medium-high heat. Melt the butter in the skillet and add the chicken pieces. Sprinkle with salt and pepper to taste and cook for 3 minutes. Add the garlic and half the green onions. Stir and continue to cook for another 2-3 minutes or until the chicken is cooked through. Add the buffalo sauce and allow to simmer and thicken slightly.
- When the tots are crisp, remove from the oven and set the oven to broil. Top the tots with half of the cheese. Spoon the chicken over the tots. Sprinkle the remaining cheese over the chicken. Place the baking sheet under the broiler and broil until the cheese has melted and begun to brown, about 3-4 minutes.
- Remove pan from the broiler. Drizzle any remaining sauce from the skillet over the tots if you wish. Drizzle with dressing and top with remaining green onions. Serve on the baking sheet.
